Chicken muffins

Great both hot and cold, these chicken muffins make a nice treat. You can have them as a proper meal or just a quick snack. They are also easy to grab on the go once prepared in advance.

Ingredients

 Baking powderpinch
 Chicken breasts2 halfs
 Cornflour1 tea spoon
 Eggs2
 Herbsaccording to taste
 Oat bran2 table spoons
 Wheat Bran2 table spoons
 Yogurt (fat free)250ml

Instructions

Pre-heat the oven to 180C

Cut the meat into small pieces for easier mashing

Mix all the other ingredients together

Add the meat and mix some more

Put the mixture into muffin (or other) molds

Bake for 45-50 minutes. Check every now and then until the edges start browning

Dairy!

Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.

Dairy should also be kept down to a total of 1kg per day.
