Chinese style - tomato egg stir fry

As a replacement of a breakfast omelette, as a sauce to Shirataki noodles, or it can just go solo, all kinds of delicious.

Ingredients

 Egg whites2
 Eggs1
 Green Onions with Tops, chopped10 g
 Parsleyif wished
 Salt & Pepperto taste
 Soy sauce (low sodium)2 tbsp
 Stevia1 tsp
 Tomatoes2 medium

Instructions

Cut tomatoes in cubes. Cut the green onions.

Beat eggs in a bowl.

Spray a pan with olive oil.

Scramble eggs and do not over cook.

Get the egg out into the original bowl.

Spray the pan with oil again, add the cut green onions. Stir until slightly cooked.

Add tomato cubes and soy sauce, salt, and stevia powder. Cook until tomatoes are softened.

Add scrambled eggs back, mix well.

On hight heat (check the max temperature for your non-stick pans) cook away extra juice.

Decorate with a piece of parsley. Serve hot.
