Ingredients

 Bell peppers1
 Cherry Tomatos1-2 handfuls
 Cucumber1/2 of a big one
 Greek yogurt (fat free)2-3 tbsp
 Lemon juice1 tbsp
 Salt & Pepperto taste

Instructions

Take half of a big cucumber, peel and wash.

Slice up the cucumber, I like to have smaller pieces so I cut up the slices into halves or even quarters.

De-seed the bell pepper and cut into small thin stripes. I like to use orange or yellow ones for this salad as it makes a nice colour mix.

Take 1-2 handfuls of cherry tomatoes and cut in halves or even quarters.

Put all the veggies into a bowl, add salt & pepper as well as the lemon juice and mix.

Add the yogurt and mix the salad again.

Dairy!

Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.

Dairy should also be kept down to a total of 1kg per day.
