*I like to buy salmon steaks with skin on & remove it before serving. The skin seems to protect the fillet from burning and easily separates after baking. No need for greasing!
Preheat oven at 350F. Wash salmon & pat dry.
Place salmon fillet in oven safe dish
Rub mustard over salmon & dress with a few of your favourite spices (I usually pick thyme)
Cover dish with foil & bake for 20 - 25 minutes (depending on thickness)
