Ingredients

 grape tomatoes, quartered8-10
 Greek yogurt (fat free)2 tablespoons
 Large Egg1 or 2
 liquid egg whites 3 tablespoons
 Oat bran2 tablespoons
 Olive Oil Sprayas needed in cooking
 Rosemarylarge sprig, minced
 spinach, shreddedhandful
 turkey, deli-chopped2 slices

Instructions

Make the Rosemary Galette by foaming the egg whites in a bowl.

In a separate bowl, mix together yogurt, oat bran and rosemary.

Add the foamed eggs and mix until it is no longer lumpy.

Spray a flat pan with olive oil spray and pour mixture on pan spreading it out as much as possible.

Cook each side until golden on medium heat. Top side will dry out before flipping.

Remove galette and let cool.

Prepare turkey, spinach and tomatoes.

Spray pan with olive oil spray and cook egg/s over easy or to desired doneness.

Once galette is cool, top it with turkey, spinach and tomatoes. Then top with cooked egg/s.

Dairy!

Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.
