Reserve 2 tablespoon of Oat Bran flour for dusting and kneading dough.
In a food processor bowl mix 12 spoons of Oat bran flour, nutmeg, salt, 1 tablespoon of Gluten and pepper and 2 eggs.
Mix well and add water as needed to form a ball that is semi hard but workable.
Knead in a flour dusted surface for 4-5 minutes.
Using a rolling pin, strech the dough until it is paper thin, always making sure it is dusted with flour to keep it dry.
Put some extra flour on the dough surface and roll it. Cut it into 1/8 (4 cm) thick little rolls.
Unroll the fettuccinne in a plate.
Cook in boiling water with 1 tsp of salt and a few drop of oil (prevent sticking) to taste.
Use your favourite sauce.
