Amazing Ricotta Cheesecake
A non-fat, healthy version of an Italian classic

Eggs5 large eggs
fat free ricotta cheese2 lbs
Nonfat Vanilla Greek Yogurt6 ounces
Skimmed milk1/4 Cup (optional)
Vanilla extract1 Teaspoon
Vanilla Protein Powder (Optional)1 Tablespoon
Preheat the oven to 325 degrees F
Stir all ingredients together in a large bowl until creamy. There may still be some lumps; this is normal.
Only use the nonfat milk if you are using the protein powder
Pour mixture into a non-stick baking pan
Bake at 325 for 90 minutes
Place in the refrigerator, and cool overnight.
Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.
Dairy should also be kept down to a total of 1kg per day.
