Ingredients

 Cayenne peppera pinch
 Chicken breasts400g
 Coriander1 tablespoon
 Garlic cloves1, crushed
 Ginger1 1/2 tsp, grated
 Lemon juicefrom 1
 Mixed salad leavesto taste
 Natural yoghurt (fat free)100g (fat free)

Instructions

Preparation time: This dish requires over night marinating.

In an air tight plastic container with a cover prepare the marinade by combining the yoghurt, ginger, lemon juice, crushed garlic & Cayenne Pepper.

Cut the chicken breast into 3 cm cubes and place into the marinade and refrigerate overnight.

The following day, prepare & light the barbeque or grill and thread the marinated chicken onto kebab sticks.

Grill the kebabs, turning frequently during cooking time.

Serve on a bed of fresh salad.

Dairy!

Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.

Dairy should also be kept down to a total of 1kg per day.
