Preheat oven to 160 degrees
place 3 strips of dried ham (whichever sort you are using) on work surface
Slice the chicken breast to almost butterfly them
Spoon in the cream cheese on one half of chicken breast then layer with last slice of ham followed by the basil (nb that any herb or flavoring can be used)
fold the chicken breast on itself and wrap with the outside ham slices
Season with salt pepper and lemon juice if desired
Wrap in tin foil to retain moisture and bake in oven for about 30 mins

Serve with vegetables on PV days
