Preheat oven to 350 F
Cut rhubarb into half inch cubes.
[If you are in stabilization you can replace the goji berries with canned cherries. In that case drain the cherries and lightly coat with flour.]
Mix all dry ingredients in a bowl.
In another large bowl, break 2 large eggs, add in the milk and vanilla essence. Mix well. Add in quark, slowly stir until smooth.
Blend the dry ingredients into the mixture slowly, until it forms a sticky paste.
Spray the muffin tray lightly, or ready the paper muffin cups.
Use a spoon, fill each muffin form with the paste up to 1/3. Stuff each with goji berries [or 2 to 3 cherries] and 2 tbsp rhubarb cubes. Add in another layer of paste, tap to remove air bubbles. Finish by topping the muffin with some more goji berries [or another 2 to 3 cherries] and 1 tbsp of rhubarb cubes.
Bring into the oven, heat on 400 F for 20 min, lower the heating to 300 to 350 F for another 15 min. (Time differs depending on the size of your muffin tray. Watch it, so that it will not get burnt)
Let cool in oven for 30 min
