Katey
Estimated time:
Servings: 1-2
Heat oven to 180C
Melt jelly crystals with small amount of boiling water, add 2 tablespoons of yoghurt and whisk with jelly until dissolved. Add required amount of cold water to make up the jelly, less rather than more.
Microwave Oat Bran with 1/4pt of water for 2 mins, give a good mix up and leave to cool.
Mix egg yolks with Canderal, Almond essence, yoghurt and cooled Oat Bran. At last minute add Baking Powder.
Whisk Egg Whites until firm and fold into mixture.
I use a 9 x 2 inch Pyrex Dish to cook the mixture (or similar)
Sprinkle with mixed spice (optional)
Cook for about 35-40 mins according to personal oven. Looks quite brown on top due to mixed spice, but still quite soft inside.
When the cake has cooled for a little while and it has drop considerably, gently pour the jelly over it. I pulled the edges away and made it into slices to enable the jelly to infiltrate (sounds like a spy film!!)
Leave to cool and then put in fridge.
Sounds like a load of messing about but in fact it isn't and doesn't take long honest!!
Adjust the servings from the recipe to match the oat bran requirements of your phase!
