10 min preparation and 30 min cooking
Beat the eggs with the baking powder until smooth.
Add the splenda, flavours and a couple of tbsp of the powder milk and mix well.
Add the lemon zest, lemon juice and more powder milk until smooth, carry on adding more of the milk until obtaining a frothy paste.
Put into silicone cupcakes or muffin moulds.
Cook in the oven at 160 or gas 3 for about 12 min then take them out and brush a bit of milk on top and put them back in for another 15 to 20 min. Check after 15 min that they are not burning.
Let them cool in the moulds for 5 min at least and then put them a cooling rack. They can be eaten hot too.
I also made a delicious cream to serve them with a bit of cream cheese, lemon flavouring and splenda..
