Ingredients

 Baking powder2 tsp
 Cream of tartar1/2 tsp
 Egg whites2
 Egg yolks1
 Low Sodium Salt1/2 tsp
 Nonfat Vanilla Greek Yogurt2 tbsp
 Oat Bran (ground into flour)6 tbsp
 Skimmed milk powder4 tbsp

Instructions

Heat oven to 200 C (390 F)
Beat egg whites with Cream of tartar (or replace with 1 tsp lemon juice) until it forms peaks.

On a separate container, mix all remaining dry ingredients (ground Oat Bran, baking powder, low sodium salt, Skim Milk Powder).

On mixer low speed:
add egg yolk
add 2 tbsp of 0 fat Greek Vanilla Yogourt (if using unflavoured Yogourt, add 1 tbsp of Splenda and a few drops of Vanilla extract)

Slowly, add the dry ingredients (ground Oat Bran, baking powder, low sodium salt, Skim Milk Powder) mixture.

Pour mixture in Silicone Muffins mould

Bake for 18 minutes.

Adjust the servings from the recipe to match the oat bran requirements of your phase!

Dairy!

Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.

Dairy should also be kept down to a total of 1kg per day.
