Ingredients

 Chicken stock2 Tbsp.
 Chives1 Tbsp. (chopped)
 Field Mushroom1 (large)
 Garlic cloves1
 Green salad leavesHandful (optional)
 No fat parmessan cheese1 Tbsp.
 Onions½ (thinly sliced)
 Turkey bacon2 slices

Instructions

Slice your onions, garlic and mushrooms finely, and add onion to a non-stick fry pan over a medium heat. Stir regularly to stop them from sticking.

Once the onions are beginning to colour, add the garlic and mushrooms and cook for a few minutes to heat.

Add the stock and salt and pepper, and turn the heat down to low to let them simmer. Start to cook your lean turkey bacon – under the grill or in a fry pan is fine.

Once the mushrooms have absorbed most of the stock take them off the heat.

Arrange your cooked bacon flat on a plate, and top with the mushroom mixture. Sprinkle the cheese over the top, and finish with chopped chives, and serve with green salad leaves on the side.
