Pre-heat a pot and cut the meat.
Sear the meat on both sides.
Add chopped onion and mushrooms.
Add thyme and salt & pepper and cook for a little while.
Take out the meat, onion and mushrooms and put aside on a plate.
Add diced pumpkin and the stock to the sauce. Place the meat on top of the pumpkin and pour the milk over it.
Cook without the lid until the pumpkin is soft, but not overcooked.
Serve the meat & pumpkin and add the mushroom & onions. Sprinkle a bit of parsley on top.
