Cut tomatoes in cubes. Cut the green onions.
Beat eggs in a bowl.
Spray a pan with olive oil.
Scramble eggs and do not over cook.
Get the egg out into the original bowl.
Spray the pan with oil again, add the cut green onions. Stir until slightly cooked.
Add tomato cubes and soy sauce, salt, and stevia powder. Cook until tomatoes are softened.
Add scrambled eggs back, mix well.
On hight heat (check the max temperature for your non-stick pans) cook away extra juice.
Decorate with a piece of parsley. Serve hot.
