Fry off onion on medium heat for five minutes in non-stick pot/pan.
Add diced garlic cloves, cumin, chili powder and lean mince combined. Brown off meat for 5 minutes.
Add beef stock, tomatoes, herbs and reduce heat.
Simmer on low for one hour adding sliced mushrooms after 30 minutes.
Add salt and pepper to taste.
Serve with fat free cottage cheese mixed through.
