I stumbled across this whilst trying to cook an egg white omelette in my very well used frying pan and it turned out far better than I could have imagined!!
Chop the leeks, spring onions and cabbage
In a small frying pan heat up some spray olive oil and add the leeks, spring onions and cabbage.
Separate the eggs and add the whites to the pan. Allowing to set like an omelette. Once the egg whites are pretty much cooked start breaking up in the pan with the spatula.
Add the ham (tear it into small bits first).
Add the cream cheese (fat free or low fat) and keep stirring till it's all melted in. (for extra flavour you can try the flavoured versions).
Add paprika and pepper.
Stir till it's all well combined, then serve.
Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.
Dairy should also be kept down to a total of 1kg per day.
