Cook just like a regular galette: in a small bowl beat the egg white until foamy.
In a separate bowl, combine the oat bran, yogurt, sweetener and lemon zest. Add the beaten egg white until blended.
Cook in a non stick pan over medium heat - 5 minutes per side or until each side is golden brown.
Allow to cool for a few minutes, then cut into bite size pieces. Serve with a dollop of the lemon yogurt and enjoy.
Add less Splenda and a bit of lemon juice if you would like it as a tart.
