 Cream cheese (fat free)120g
 Crushed black pepperTo taste
 dill1 tbsp dill, chopped
 little gem lettuce heart2
 Prawns50 g cooked prawns, roughly chopped
 Tomatoes1 medium



Divide the lettuce into 8 individual leaves, wash and pat dry.


Mix the low fat cream cheese with the tomato, dill and pepper and place a spoonful onto each leaf.


Top with the prawns.


Serve 2 leaves per person as a light lunch or starter or serve as part of a buffet.


Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.

Dairy should also be kept down to a total of 1kg per day.
