 Cherry Tomatoeshandful
 Curry powder1/4 tsp
 Garam Marsala1/2 tsp
 Ground Chilli/Chilli Flakesa pinch
 Ground cumin1/2 tsp
 Onions1/2, sliced



Slice onion very finely (it won't have time to cook well), and slice cherry tomatoes in half.


Beat the eggs together well, add the veges, the garam marsala, the curry powder, and the chilli - stir well to ensure all the spices don't clump together.


Heat a non-stick fry pan on a medium heat, spray oil, and add the cumin, stirring it constantly until you can smell it strongly.


Add the egg mixture to the pan, then after a few minutes once it's starting to bubble, place it under the grill to finish cooking the top.


Once it's lightly browned on the top, take the omelette out and serve it.
