 Almond flavouring1/2 tsp
 Artificial Sweetnerto taste
 Lemon zest1/2 lemon
 Natural yoghurt (fat free)6 tbsp
 Unsweetened vanilla custard powder1 tbsp



Crumble the 250 g tofu (the smoother the tofu, the better) into a measuring jug or similar.


Add the flavouring, yogurt, zest of half a lemon, custard powder and sweetener.


Use a stick blender to blend until completely smooth. Check the flavour and add a few extra drops of sweetener or flavouring as necessary.


Spoon into two glasses and chill.


You can vary the flavours. I have tried vanilla and lemon (1 tsp vanilla flavouring plus the zest of 1/2 a lemon), which is also delicious.


I checked the ingredients of my custard powder and it contains no sugar, just cornstarch and flavouring, which makes it fine (up to 1 tbsp).


Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.

Dairy should also be kept down to a total of 1kg per day.
