Place the 4 anchovies in oil on to a sheet of kitchen roll paper to absorb all of the oil
Chop up the chicken breasts into 1 inch cubes
Oil a frying pan and wipe it out with kitchen roll paper
Turn the heat on low
Add the pieces of chicken
Chop up the rosemary and thyme very fine
Chop up the garlic and onion very fine
When the chicken is nearly cooked (white) add the onion and garlic to the chicken
Chop up the 4 oil-less anchovies into 1/4cm pieces
Add the 100g low fat cottage cheese to the chicken in the pan mix and heat up for 3 mins
Then add the herbs and anchovies to the mixture - cook this for 2 more minutes.
Serve in a bowl
