Shepherd's Pie

Ingredients

 Bell peppers1
 Broccoli1 cup
 Cabbage1.5 cup
 Carrots2
 Cauliflower2
 Celery3 sticks
 Cottage Cheese (fat free)3 table spoons
 Lean minced meat500g
 Onions1
 red wine vinegarto taste
 Zucchini1/2, small

Instructions

Steam veges, with the cauliflower kept separate from the other veges

Cut onion finely and brown. Add mince and brown, once mostly cooked add the redwine vinegar to taste.

Pre heat oven to 180 degrees Celsius

Once veges have been steamed mix with the mince in a large baking dish or two small ones

Mash or puree the cooked cauliflowers until there are no lumps, mix in some pepper and the cottage cheese to make the cauliflower creamy

Spread the cauliflower over the top of the meat and veges and bake for 10-20 mins

This always tastes best if it is made ahead of time (i.e. one or two days before eaten)

Dairy!

Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.

Dairy should also be kept down to a total of 1kg per day.
