Ingredients

 1 T. fresh chives, basil, cilantro, chopped fine1 tsp to taste
 Cream cheese (fat free)1 tsp
 Creme Fraiche Low Fat 2 Tablespoons
 Eggs1
 Oat bran3 Tablespoons
 shredded smoked salmon1-2 slices

Instructions

To make the Blini (oat bran pancake), beat eggs in a bowl, add in creme fraiche and oatbran to make a batter.

Cook blinis in a non-stick frying pan (approx 10 cm diameter) until golden brown each side.

Allow to cool, and store in an airtight container in the fridge for up to one week.

Mix chopped fresh herbs with cream cheese.

Spread onto blini

Top with smoked salmon and enjoy your lunch!
