Spicy Pumpkin Soup

Ingredients

 Chiveschopped
 Coriander1 tea spoon
 Cumin1 tea spoon
 Nutmegto taste
 Onions1, chopped
 Pumpkin675g
 Red chilli1 dried, crushed
 Salt & Pepperto taste
 Skimmed milk100ml
 Vegetable stock600 ml

Instructions

Heat oil in a large saucepan.

Add onion and cook with the cumin and coriander
until softened.

Add pumpkin and cook for a few minutes, then
add stock..

Grate in some fresh nutmeg, add chilli and
season, then cover and cook until pumpkin soft, about 15 min.

Add milk and blend until smooth.

Return to pan and heat through, adding more
seasoning, milk or stock.

Garnish with chives.

Dairy!

Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.

Dairy should also be kept down to a total of 1kg per day.
