Finely chop the pickled gherkins and half onion (a food mixer is best).
Warm the milk.
Mix the Egg Yolk, Mustard & Lemon Juice in a saucepan and heat gently until it starts to thicken.
Slowly add the warm milk, stirring continuously until it thickens. Do not allow to boil.
Add the finely chopped pickles and onion and mix in.
Serve warm or chilled.
