Heat a pan, add some "I can't believe it's not butter" or whatever butter sub you have. Saute the toms for about 5 minutes , then add a little bit of splenda to sweeten as they go a bit bitter when you cook them. Place in an ovenproof cooking dish.
I you don't want to use sour cream, use cream cheese..not sure the amount, but play with the recipe until you get what you like. You can use feta or goat cheese too. This recipe is very versatile.
Mix together the eggs, cream, milk, cornflour and salt/pepper. Pour over the tomatoes and bake about 20 minutes at 350. You can add courgettes if you want too!!! Yum!
