This is adapted from a middle eastern dessert named muhalabeya. But this is the diet friendly version of it. Enjoy!

Dissolve the corn flour in cold skimmed milk.
On medium heat, stir the milk and corn flour mixture and add the sweetener and the vanilla/coconut extract.
Keep stirring till the mixture boils and thickens.
Pour the mixture into pudding cups.
Sprinkle with cinnamon and leave to cool, then refrigerate for one hour.
Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.
Dairy should also be kept down to a total of 1kg per day.
